Granny SmithGranny smith apples hold up well - they can be a bit tart - but are great for baking and cooking with. Remember - what makes them one of the best apples for dehydrating is their flavor which intensifies when dehydrated.
MutsuAlso known as Crispin, this firm-fleshed apple is less tart. This is a good choice
HoneycrispThis is a great apple with a crisp texture and will hold firm almost no matter how long you dehydrate them - this makes them versatile.

These were the best apples for dehydrating we found - but we did not test all - so if you have others just try them. If they are too tart a little cinnamon makes a lot of difference - or a light honey dip helps a lot also.
